Food-Joy Recipe of the Week:
Bacon-Wrapped Chicken Breasts Stuffed with Spinach and Goat Cheese

Ingredients:
- 4 boneless skinless chicken breasts
- 8 slices bacon (low-sodium or regular)
- 4-5 oz. goat cheese
- Handful baby spinach leaves
- 2 Tsp minced garlic
- Black pepper and garlic salt - To taste
Directions:
- Preheat oven to 400.
- Using a sharp knife, butterfly chicken breasts.
- Place them in a ziploc bag and pound with a meat tenderizer, 10-15 seconds on each chicken breast.
- Garlic salt and pepper the inside and outside of chicken, set aside.
- Crumble goat cheese into a medium-sized mixing bowl.
- Chop baby spinach leaves, add to goat cheese.
- Also add minced garlic, pepper and garlic salt, and blend all of these ingredients together with a spoon.
- Spoon this mixture evenly into open-faced chicken breasts, fold top side of chicken over the mixture to close.
- Place two strips of bacon per chicken breast diagonally on the baking sheet.
- Place chicken breast vertically on top of them, and wrap bacon around chicken, use a toothpick to secure if necessary.
- Pop into oven and roast for 30 min or until meat is desired tenderness.
Yield – 4 servings (½ chicken breasts are big enough portions for 1 person also!)
Side note: If you aren’t a fan of goat cheese (chalky, rich and tangy), try queso fresco (rich and smooth) or blue cheese (rich, nutty and tangy). All are delicious in this recipe and found in ordinary grocery stores!
